Spelt Fruit & Nut loaf

Makes 1x 2lb / 900g loaf tin
Ingredients
- 450 g wholegrain spelt flour
- Pinch of salt
- 1 teasp Demerara sugar
- 2 teasp honey
- 1 teasp bread soda
- 1 egg
- 100 g raisins
- 100 g dried apricots, chopped
- 50 g chopped almonds
- 50 g chopped walnuts
- 1 tbsp ground cinnamon
- 1/2 lit buttermilk
- seeds for top
Recipe
- Pre heat oven to 190c / gas 5. Oil the loaf tin with a little olive oil or sunflower oil.
- Put the flour, salt, sugar, honey, bread soda & egg into large bowl & mix well together.
- Stir in the fruit, nuts & cinnamon. Now pour in the buttermilk and combine all together.
- Pour into prepared tin & brush with a little buttermilk.
- Sprinkle with seeds.
- Bake in oven for 1 hour or until baked through & a nice golden colour on top.
